- Isojiman Junmai Ginjo (2000) — From Isojiman Shuzo in Yaizu, Shizuoka — 'Pride of the Seashore.' Paired by Chef Yuuki Hayashinouchi, who trained seven years under Hachiro Mizutani (Jiro Ono's disciple), at his intimate 8-seat Hiroo counter.
