- Uni (Sea Urchin) — Uni (sea urchin) — served as nigiri at Sukiyabashi Jiro, established 1965 by Jiro Ono. The restaurant held three Michelin stars for ten consecutive years; Ono was recognized by Guinness as the oldest three-star head chef.
