Michelin one-star modern French restaurant opened in 2021 by Chef Kazuma Gunji, a saucier by training. The name takes the French verb meaning to pour sauce over bread. The heart of his cooking is the triple consommé, a three-day process reducing 20 kilograms of chicken to 3 kilograms of rich liquid gold.
