Add-ons: Caviar Hand Roll $55 (made tableside by chef with Uruguayan sturgeon caviar, signature dish highly recommended), Uni $22 (availability varies). Wine pairing $65. Signature: Breakfast Taco (ajitama, salsa verde, trout roe - on menu since opening), Hamachi (shiso, Meyer lemon curd, butter), Raw Blue Crystal Prawn (sweet corn, Calabrian chili oil), Chicken Roulade (miso purée, spicy mole), Tomato three ways (lemon cucumber, toasted sesame), Caraflex Cabbage (nori, toasted hazelnuts), Pork.
