An outpost of the celebrated Ginza original, Sushi Ichi has held its Michelin star since the very first Singapore guide in 2016, making it one of the city's most consistently recognised Japanese restaurants. Chef Masakazu Ishibashi sources fish directly from Tsukiji and regional Japanese ports, preparing each piece with the precise edomae technique honed at the Tokyo mother house. The intimate hinoki counter seats just a dozen guests for unhurried omakase experiences.
