The 20-course tasting menu ($285 per person) weaves Edomae sushi tradition with Jason's Taiwanese-American heritage, distinguished by a signature dry-aging technique applied to fish such as hirame and kanpachi. Hay-smoking, binchotan charcoal finishing, and kumiko wood aesthetics complete the meditative experience, offered Wednesday through Sunday in two seatings.
