Chef J. Trent Harris—James Beard-nominated and trained at two-Michelin-star Sushi Masaki Saito in New York and Sushi Ginza Onodera in Tokyo—brings a distinctly Southern personality to Modern Edomae-style omakase at his 15-seat U-shaped Southern cypress counter in West Midtown. The daily-changing menu ($245 at the counter, $275 in the private Koshitsu room) opens with seasonal small plates (zensai) heavy on local and Japanese ingredients before moving into a progression of lightly aged nigiri. The Michelin inspectors described it as 'tradition replaced with a rollicking good time.'
