Kaido Sushi Bar is Valencia's MICHELIN-starred omakase sushi counter, led by Japanese master chef Yoshikazu Yanome. Seating just ten guests around a counter, Kaido offers a single tasting menu (€140) in which the chef selects and prepares every course based on the day's finest fish and shellfish, in the purest omakase tradition. The menu is seasonal, secreted, and never published in advance. Guests are advised that the cuisine is 'closely linked to the sea', that most preparations involve raw fish, and that vegetarians and those with allergies to fish, shellfish, or seaweed are not suited to the experience. Yanome placed fifth globally at the Sushi Challenge 2023 and was named Japanese Goodwill Ambassador 2024.

Tasting Menu
- Counter omakase experience (140) — The full Kaido experience — 10 seats around a sushi counter, one daily service at 14:00 (lunch) or 20:30 (dinner), chef Yoshikazu Yanome preparing each course by hand. The restaurant strictly requires punctuality: service begins simultaneously for all diners, and guests arriving 30 minutes late forfeit their reservation. Perfume is discouraged to preserve the sensory integrity of delicate fish preparations.
- Omakase Tasting Menu (130) — Kaido's single daily tasting experience — a fully seasonal omakase (chef's choice) counter menu in which chef Yoshikazu Yanome selects and prepares every course based on the day's finest Mediterranean and Japanese market fish. The menu changes completely with each service and is never published in advance. Guests are seated together at a 10-seat counter and the experience begins simultaneously for all diners. Most preparations involve raw fish; the restaurant advises that vegetarians, coeliacs, and those with fish/shellfish/seaweed allergies should not attend.
