About Yoshikazu Yanome

Kaido ('pathway') represents the encounter between Japan's most refined culinary tradition — the austere perfection of Edomae sushi — and the Mediterranean. Valencia's proximity to the sea gives Yanome access to extraordinary local fish: merluza, langostinos, cigalas from the Gulf of Valencia, combined with premium neta flown from Tokyo's Toyosu market.

Yoshikazu 'Yoshi' Yanome is a Michelin-starred Japanese sushi chef and executive chef at Kaido Sushi Bar in Valencia — the only Michelin-starred Japanese restaurant in the entire Valencian Community. Kaido earned its star in 2021. He brings traditional Edomae sushi discipline to Valencia, sourcing fresh Mediterranean fish alongside Japanese imports.
