  • Salad of Scottish Asparagus — With wild herbs & flowers, jamon Iberico, soft goats curd, smoked lemon and asparagus mousse.
  • Scallop Tartare — Dressed with lemongrass oil, pickled kohlrabi, crostini of hot-smoked salmon, pink grapefruit gel, avruga caviar and spring onion.
