- Salad of Scottish Asparagus — With wild herbs & flowers, jamon Iberico, soft goats curd, smoked lemon and asparagus mousse.
- Scallop Tartare — Dressed with lemongrass oil, pickled kohlrabi, crostini of hot-smoked salmon, pink grapefruit gel, avruga caviar and spring onion.
- Roast Monkfish — With pearl barley cooked in shellfish bisque & paella spices, sea herbs and lemon.
- Slow Roast Pork Cheek — With polenta mousse, pickled apple and crackling with cider jus.
- Lemon Sole — Baked in lime & seaweed butter, with Scottish asparagus, young leeks, rainbow chard, potato beignets and leek velouté.
