Intimate 8-seat hinoki counter with 2 seatings nightly. ~20-23 courses featuring fermentation techniques, ice-aging, vinegar curing, Edomae-style preparations. After omakase, guests receive menu for à la carte Okonomi (premium nigiri $25-50/piece). Meal finishes with traditional tea ceremony in private tea room hosted by Chef Nakazawa's daughter.
