Chef Hiroyuki Kawashima blends traditional techniques with thousand-year-old Nara ingredients — Hishio fermented seasoning predating soy sauce, Kakinoha-zushi (persimmon leaf pressed sushi), and the ancient Yamato Tachibana citrus pepper.
