- Millefeuille of Foie Gras, Glazed Eel and Caramelised Apple — Martín Berasategui's most iconic creation — executed daily at Lasarte by head chef Paolo Casagrande. Ultra-thin alternating layers of silky foie gras torchon, glazed smoked eel and caramelised apple fan form a millefeuille of extraordinary technical precision and flavour depth. The sweet/fatty/smoky interplay is the signature expression of Basque haute cuisine at its pinnacle. Regarded as one of Spain's definitive dishes.
