L'Ambroisie has held three Michelin stars continuously since 1988, making it one of the longest-running three-star restaurants in Paris. Chef-owner Bernard Pacaud operates this rare à la carte-only establishment on the historic Place des Vosges in the Marais. The 17th-century townhouse features Aubusson tapestries, period antiques, and an atmosphere of timeless French grandeur. Pacaud's cuisine is rooted in classical tradition with exceptional ingredients, from his legendary tarte fine sablée of chocolate to the escalopines de bar à l'émincé d'artichaut.
