One of the first two street food stalls in the world to earn a Michelin star in 2016, Hill Street Tai Hwa Pork Noodle remains the only starred hawker in Singapore. Third-generation owner Tang Chay Seng perfects the art of bak chor mee — springy noodles tossed in a savoury vinegar-based sauce with minced pork, liver, fish cake, and a deeply flavoured stock. Queues regularly stretch for over an hour, a testament to its legendary consistency.
