HISTORICAL: One-Michelin-star + Green Star farm-to-table restaurant (CLOSED July 1, 2025). Chefs Evan Burgess (self-taught) and Osmel Gonzalez (Disfrutar, Den, Akasaka Kikunoi) showcased 80%+ Florida-sourced ingredients with zero-waste approach. Intimate 18-seat pop-up inside Tinta y Cafe featured hyper-seasonal à la carte menus blending Spanish, Japanese, and Cuban techniques. Restaurant closed as both ventures outgrew shared space.
