The Haeberlin family (now 4th generation under chef Marc Haeberlin) defined Alsatian haute cuisine for the 20th century, holding 3 Michelin stars for 51 consecutive years. The restaurant's legendary dishes — Mousseline de Grenouilles 'Paul Haeberlin', Saumon Soufflé Auberge de l'Ill, Homard Prince Vladimir — are as celebrated as Escoffier's classics, and appear on menus unchanged as living monuments to French culinary heritage.
