About Marc Haeberlin
Marc Haeberlin is the 4th generation of the Haeberlin family dynasty that has presided over the Auberge de l'Ill since 1878. The restaurant held 3 Michelin stars for 51 consecutive years (1967–2019) before being reduced to 2 stars — still one of the longest 3-star runs in French culinary history. Marc trained under Paul Bocuse, Alain Chapel, and Fredy Girardet before returning to the family house. He continues the Haeberlin legacy of classic Alsatian haute cuisine, preserving legendary dishes created by his father Paul (including the famous Mousseline de Grenouilles and Saumon Soufflé) while adding his own contemporary interpretations. The restaurant sits on the banks of the river Ill in Illhaeusern, its willow-lined terrace one of the most iconic dining settings in Alsace.
