Julien Binz (Maître-Cuisinier de France) celebrated 10 years and his restaurant's new kitchen in 2025. Three tasting menus showcase his mastery: Or du Temps (€59), Binz'tronome (€105, chef's surprise), and the prestige Fragonard (€134). His deep Alsatian training produces dishes of extraordinary restraint and precision — the cuisine of a chef who, as Michelin puts it, has 'no secrets' in the kitchen.

- Riesling Grand Cru Wineck-Schlossberg — Ammerschwihr (17) — Riesling from the Wineck-Schlossberg Grand Cru: the Grand Cru vineyard of Ammerschwihr, on granite soil with exceptional sun exposure producing wines of citrus, mineral, and longevity. Binz's home Grand Cru is the wine served as the reference Alsatian Riesling at the restaurant — the wine that grows a 5-minute walk from the kitchen. Available by the glass and bottle; vintages going back 5 years for mature bottles.
