About Julien Binz

Julien Binz is a Maître-Cuisinier de France who spent over 20 years at the Auberge de l'Ill — training under Marc Haeberlin in one of the most celebrated apprenticeships in Alsatian gastronomy. He opened his own restaurant in Ammerschwihr in 2015 and earned his Michelin star in 2017. In 2025, he celebrated both his 10th anniversary (with a new kitchen inauguration) and 8 consecutive years of star retention. His Gault & Millau rating is 3 toques. The Michelin Guide calls him 'a veteran chef for whom the world of cooking has no secrets'. Three menus: Or du Temps (€59), Binz'tronome (€105 surprise), and Fragonard (€134 prestige).
