Plénitude opened in 2021 within the restored La Samaritaine building on the banks of the Seine as part of the Cheval Blanc Paris hotel, earning three Michelin stars by 2023. Chef Arnaud Donckele, who previously held three stars at La Vague d'Or in Saint-Tropez, brings his Mediterranean-inflected approach to Paris with a focus on essences, bouillons, and concentrated flavors. The 26-seat dining room on the first floor offers views of the Pont Neuf and the river, with interiors by Peter Marino combining contemporary art with classical Parisian elegance.
