- Sardine Tartare with Plankton Emulsion, Kohlrabi and Chermoula Mayonnaise — Chef Van Echelpoel's vibrant salty sardine tartare flanked by an emulsion of plankton, finely sliced kohlrabi, and a punchy Greek yoghurt dressing finished with a crispy chermoula mayonnaise — Asian acidity meeting Belgian precision.
