Chef Elliot Beaudoin operates under a strict locavore charter that excludes any ingredient that cannot be sourced from Québec or boreal North America — no chocolate, no pepper, no citrus, no vanilla. The restaurant's name refers to the legendary stories embedded in every Quebec forest and farm. Six courses at approximately CAD 110 per person unfold as a narrative of the province's seasons and landscapes, using ingredients such as spruce tips, wild leeks, kelp, fiddleheads, and indigenous grain varieties in place of the luxury ingredients of international fine dining.
