Le Relais de la Poste is a historic 1789 half-timbered inn in La Wantzenau that earned its first Michelin star in 2023 under chef Thomas Koebel. Koebel's cooking is proudly Alsatian: he champions local produce over imported fashion, preferring horseradish to wasabi, working extensively with foie gras and offal. His signature dishes include goose foie gras from Hirsch farm with Berawecka fruit chutney and puff pastry pretzel, scallops with celery remoulade and roasted apple, and a crispy egg with artichokes and truffle. The rosé Crémant has a pale salmon-pink colour and strawberry-cherry fruit character; it serves as both the aperitivo and the wine that bridges between white and red courses at a table.
