La Table d'Olivier Nasti sits inside Le Chambard, a 5-star Relais & Châteaux hotel in Kaysersberg — voted by CNN the 'most beautiful Christmas village in France'. Nasti's cooking is anchored in game: as a hunter who stalks the Vosges mountains personally, he serves venison, partridge, pheasant, grouse, and quail through the hunting seasons with a reverence for the animal that MOF-level technique makes possible. His Arctic char cooked in local beeswax, Rhine eel with 64° egg, and Vosges morel preparations are the non-game anchors that complete the Alsatian terroir picture. The restaurant also holds a Michelin Key (its hotel award) and is a founding member of Relais & Châteaux.
