About Thomas Koebel

Thomas Koebel is a 36-year-old Alsatian chef who trained at Le Crocodile (under Émile Jung in Strasbourg), Le Cygne (Gundershoffen), the Kempferhof Golf hotel, and Les Secrets de l'Orient Express in Geispolsheim. He earned the Michelin star in 2023 (his first — awarded March 2023). His philosophy is deeply Alsatian: he uses horseradish over wasabi, works extensively with foie gras and offal, and revisits classics like tarte flambée and choucroute with modern technique. The Relais de la Poste is a historic half-timbered building dating to 1789 in La Wantzenau, now a 3-star hotel with 18 rooms — distinct from the unrelated Relais & Châteaux property in Magescq, Landes.
