Le Cerf in Marlenheim holds what may be France's longest continuously-held family Michelin star — first awarded to Paul Wagner in 1936, maintained for 90 consecutive years by 2026. Situated at the northern gateway to the Alsace Wine Route, the restaurant's flagship preparation is the Vol-au-Vent 'Paul Wagner' (Bouchée à la Reine): veal, sweetbread, poultry, mushrooms, morels, and poultry quenelles in perfectly balanced sauce — a dish created by the founder and still served today. Chef Michel Husser (trained under Haeberlin) balances the house's legendary heritage dishes with modern seasonal preparations.

- Pinot Noir d'Alsace — Marlenheim Rouge, Home Village (13) — Pinot Noir from Marlenheim itself — the village where Le Cerf has stood since the 14th century (the inn's origins predate the restaurant's current Michelin history by 600 years). Marlenheim is one of the premier red wine villages of the Bas-Rhin; the Husser family works with the local cooperative and independent growers for a house Marlenheim red that serves as the restaurant's connection to its home. Available by the glass.

- Paul Wagner Vol-au-Vent (Bouchée à la Reine) (47) — THE signature of Le Cerf since 1936 — veal, sweetbread, poultry, mushrooms, morels, and poultry quenelles in a perfectly balanced, richly reduced sauce, served in a puff pastry shell. Created by Paul Wagner (the great-grandfather who first earned the Michelin star) and served unchanged for 90 years. Possibly the oldest uninterrupted dish on any Michelin-starred menu in France.
