Au Vieux Couvent in Rhinau is one of Alsace's most extraordinary sustainability stories: Alexis Albrecht grows 80% of his restaurant's ingredients in a 6,000m² family garden, sources Rhine eel from local fishermen, and game from local hunters. The Michelin Green Star (held alongside the regular star since its introduction) confirms this commitment. The family Michelin star has been continuous since 1983 — 42 years. Albrecht's Rhine eel preparations are unique in the region; his 2015 Gault & Millau Pastry Chef of the Year title highlights the exceptional dessert programme. The former convent setting adds architectural beauty to the experience.
