La Merise is a destination restaurant in the truest sense — a 2-star gastronomic jewel in Laubach, a Vosges village of 300 people, 40 minutes from Strasbourg. Chef Cédric Deckert and his wife Christelle (maîtresse d'hôtel) have built one of Alsace's most personal culinary experiences around his philosophy of 'simplexity': extraordinary technique in service of clean, honest, intelligible flavours. The reclaimed-materials building (oak timber frame, Vosges sandstone, biberschwanz tiles) houses a restaurant with its own herb garden, orchard, and beehives producing house honey. Signature dishes include a Black Forest cherry tartlet with griottines in liqueur, langoustines with raspberry-vinegar cream and caviar, and Arctic char tartlet with marinated trout eggs.

  • La Merise en VI Temps (6 Courses) (220) — Six-course tasting menu. Egg with nutmeg and ginger, langoustines, dry-aged John Dory with smoked eel, Alsatian tribute, milk-fed lamb (or Japanese wagyu +EUR45). Cheese chariot available (EUR30 supplement).
  • La Merise en V Temps (5 Courses) (175) — Five-course tasting menu. Marinated langoustines, milk-fed lamb with mogettes and anchovy chutney, childhood memories dessert. Cheese chariot available (EUR30 supplement).
  • Lunch Menu (3 Courses) (98) — Three-course lunch menu between meadows and orchards. Available Thursday and Friday noon only (excluding holidays). Chef Cedric Deckert. 7 Rue d'Eschbach, Laubach.
