About Cédric Deckert
Cédric Deckert opened La Merise in October 2016 with his wife Christelle in a meticulously restored Alsatian building in Laubach — a village of 300 people in the Northern Vosges nature park. He earned his first Michelin star in 2018 and his second in 2021. His philosophy is 'pure and direct' cooking — what he calls 'simplexity': exceptional technique serving authentic, intelligible flavours without unnecessary complexity. He sources from short supply chains, maintains a herb garden and beehives producing house honey, and works with the rhythm of the Alsatian seasons. La Merise became a member of Les Grandes Tables du Monde in 2022 and Relais & Châteaux in 2023 — extraordinary achievements for a restaurant in a village of 300.
