JY'S is Jean-Yves Schillinger's creative crossroads of Alsace and the world — a 2-star restaurant where Alsatian roots collide with Japanese, American, and Moroccan influences earned during years of international work. The result is dishes like Alsace pigeon with bitter chocolate and Moroccan spice, hamachi with green apple and wasabi, and Arctic char cooked in oil with basil-parmesan sauce. The signature sweet trolley — a rolling dessert display rolled to each table — has become one of JY'S most beloved rituals. In 2025, the restaurant was added to Michelin's 'Passion Dessert' list, the guide's highest recognition for pastry excellence.
