About Jean-Yves Schillinger

Jean-Yves Schillinger grew up in Alsace but cut his teeth in New York, where exposure to Japanese, Moroccan, and American techniques permanently influenced his French training. After returning to France, he established JY'S inside the modern MGallery hotel L'Esquisse in Colmar's city centre. The restaurant's floor-to-ceiling windows overlook the Champ de Mars park, and its 200m² dining room is matched by a 180m² kitchen. Schillinger earned his first Michelin star in 2007 and his second in subsequent years. In 2025 JY'S was added to the prestigious Michelin 'Passion Dessert' selection, recognising the exceptional pastry work of his team.
