- Guji no Sakayaki - Grilled Tilefish with Sake — Signature dish passed down through six generations. Tilefish doused in sake multiple times, building layers of flavor. Can be enjoyed as a soup after savoring the grilled fish, releasing its delightful aroma.
- Shiro-miso Zouni - White Miso Soup with Rice Cakes — Generational signature. White miso soup made exclusively with water drawn from a well on the premises. Freshly grilled rice cakes and spicy condiments. No seasonings or broth added — relies on the natural flavors of the ingredients.
- Tomewan - Miso Soup — Final soup course with seasonal miso.
- Shiizakana Additional Course — Additional course to 'strengthen' the meal. Often features rare seasonal ingredients.
