- Signature wine-marinated mussel on an edible potato starch and squid-ink 'shell'
- delicate tartlet of sea trout with fennel tops, brown shrimps and trout roe
- seared/caramelised kohlrabi with a spiced soy glaze, bergamot, pickled kohlrabi, micro leaves and flowers
- cured and barbecued gurnard with mussel XO sauce, persimmon vinegar, English wasabi, and charred fermented leeks
- succulent loin of hogget with courgettes, roasted girolles, goat's curd accents and an anchoïade dressing
- pineapple weed mousse and gel, sponge, meringue shards, nasturtium 'jam' and a salty umeboshi plum crumble
