  • Signature wine-marinated mussel on an edible potato starch and squid-ink 'shell'
  • delicate tartlet of sea trout with fennel tops, brown shrimps and trout roe
  • seared/caramelised kohlrabi with a spiced soy glaze, bergamot, pickled kohlrabi, micro leaves and flowers
  • cured and barbecued gurnard with mussel XO sauce, persimmon vinegar, English wasabi, and charred fermented leeks
