  • CoCo Vietnamese Rice — Vietnamese rice reimagined with seasonal accompaniments — rice is the backbone of Vietnamese cuisine and central to Chef Vuong's coastal heritage.
  • Fermented Course — A course showcasing Vietnamese fermentation traditions — mắm, pickles, and cultured ingredients. Chef Vuong's first four seasonal menus were rooted in fermentation, curing, and aging.
  • Coastal Seafood Course — Inspired by Chef Vuong's childhood in Mui Ne on the coast of Phan Thiet — featuring the region's prized seafood prepared with contemporary technique and fermentation.
  • Central Vietnam Course — Representing the refined culinary traditions of central Vietnam, featuring complex layered flavors from one of the 11 regions in the Lữ Hành journey.
  • Southern Vietnam Course — Ingredients from southern Vietnam, reflecting the agricultural abundance of the Mekong Delta and Chef Vuong's adopted home of Ho Chi Minh City.
