- La Chapelle (20) — Calvados, Jamaican rum, masala cider, vanilla, lemon, herbal honey liqueur. Sweet fruits with fragrant spices.
- Pigalle (22) — Cognac, 16-year rum, Byrrh banana, bitters. Dark fruit, medicinal, woodsy, bitter, and boozy.
- Maxime's Negroni (22) — Gin, Amer Picon, rouge vermouth, orange bitters. Named after a regular customer. Cacao-like with citrusy, bittersweet notes.
- Rue Sainte-Anne (21) — Ume Japanese whisky, Raicilla, Orange Liqueur, Champagne Acid. Vegetal, earthy character with spice and citrus.
- Le Marais (21) — Cognac, bourbon, Byrrh, strawberry-infused rouge verjus, banana, gentian. Nutty, chocolate-y, boozy.
- Saint-Germain (20) — Tequila blanco, yellow chartreuse, spiced pineapple gomme, lime, sage. Tropical fruits with herbal notes.
