Atelier Moessmer occupies a 19th-century villa within a 6,000-square-meter park in Brunico, South Tyrol, born from a collaboration between Norbert Niederkofler and Moessmer Woolen Mill. The multi-room dining experience moves guests through a lounge, garden terrace, open kitchen counter, library, and dining room over the course of a single tasting menu. One of only 35 restaurants worldwide to hold three Michelin stars plus a Green Star.

- Beetroot Gnocchi — Grand Classic signature dish. Gnocchi made with locally grown beetroot, showcasing the vibrant colors and flavors of mountain root vegetables.
- Twice-Smoked Trout with Elderflower — South Tyrolean trout, twice-smoked and adorned with elderflower in various preparations.
- Spruce Tartlets — Delicate tartlets made with spruce, served as part of the garden amuse-bouche sequence during warmer months.
- Minestrone — Far from traditional — a revelatory take on minestrone using seasonal mountain vegetables and Alpine herbs.
- Spatzle — Soft and enveloping South Tyrolean spatzle, prepared with seasonal accompaniments.
- Tarte Tatin (30) — Grand Classic signature dessert, available as an optional supplement. Served with delicious ice cream.
- Beet Tartlet — Tartlet filled with grapes, duck speck, and a hollandaise-like sauce. The beets contribute sweetness, pickles provide acidity.
- Charred Mountain Salad — Fire-cooked mountain vegetables prepared in asador style over open flame.

- Cook the Mountain Tasting Menu (320) — Single tasting menu of approximately 14 courses showcasing hyper-local Alpine ingredients from South Tyrol and the Dolomites.
