Atelier Moessmer occupies a 19th-century villa within a 6,000-square-meter park in Brunico, South Tyrol, born from a collaboration between Norbert Niederkofler and Moessmer Woolen Mill. The multi-room dining experience moves guests through a lounge, garden terrace, open kitchen counter, library, and dining room over the course of a single tasting menu. One of only 35 restaurants worldwide to hold three Michelin stars plus a Green Star.

- Chicken Liver with Black Rice Vinegar — Chicken liver macerated in local black rice vinegar, finished with black garlic.
- Smorrebrod with Local Fish — Open sandwich of local fish cured in salt, studded with pickled elderflowers.
- Mountain Herb Salad — Seasonal salad featuring up to 30 different mountain herbs gathered from the surrounding Alpine meadows.
- Mountain Cheesecake — A signature creation using local Alpine cheeses. Belies serious complexity beneath a simply named dish.
- White Fish Tartare (Coregone) — Grand Classic signature dish. Whole-fish utilization of coregone (whitefish) from local Alpine lakes, demonstrating zero-waste cooking principles.
- Char over Fire with Salsify Cream — Char fish grilled over fire with salsify cream sauce made with koji, accompanied by a fish ball with crunchy seedy shell.
- Beetroot Gnocchi — Grand Classic signature dish. Gnocchi made with locally grown beetroot, showcasing the vibrant colors and flavors of mountain root vegetables.
- Spruce Tartlets — Delicate tartlets made with spruce, served as part of the garden amuse-bouche sequence during warmer months.
- Tarte Tatin (30) — Grand Classic signature dessert, available as an optional supplement. Served with delicious ice cream.
- Waffles with Fish Lard — Crispy waffles topped with fish lard, served in the garden as an opening snack.
