Arrels is the MICHELIN-starred restaurant of Victoria Sevilla — the youngest woman in Spain to earn a Michelin star — set in the historic town of Sagunto, 30 kilometres north of Valencia. From a modest space in the shadow of Sagunto's ancient castle, Sevilla practises a cuisine rooted in the Valencian sea and the Albufera's freshwater traditions, with particular devotion to the iconic grilled Albufera eel with blanquet. The menu is market-driven and changes throughout the year; its vegetarian counterpart offers equal imagination. Sommelier and sala director Yelko Suárez completes the experience with precision and warmth.
