Arrels means 'roots' in Valencian — a perfect name for Sevilla's hyper-local manifesto. Sagunto is an ancient city north of Valencia with Iberian, Roman, and Moorish layers of history. Her menus are a topographic map of the surrounding Valencian countryside, working directly with producers from Camp de Túria and Camp de Morvedre.

Victoria 'Vicky' Sevilla, born 1992 in Cuart de les Valls (Valencia), opened Arrels in nearby Sagunto at age 25 in 2017 and earned her Michelin star in 2022 at age 29 — making her the youngest female chef in Spain to earn a Michelin star. Her cuisine is deeply rooted in Valencian terroir, sourcing almost exclusively from local farmers.
