Flores Raras — meaning 'rare flowers' — is the reborn identity of the former El Poblet, which opened on January 28, 2026 at the same address in Valencia's historic centre, retaining its two MICHELIN stars. Owned and directed by Quique Dacosta, the restaurant is now led by chef Carolina Álvarez — a Mexican cook who spent 15 years within the Dacosta group, including six years as head chef of the three-star Quique Dacosta Restaurante in Dénia. Three tasting menus (Selección/1988, Territori, Ciutatvella) offer varying levels of access to a contemporary Mediterranean cuisine grounded in Valencian sea and garden produce. Sommelier Hernán Menno oversees a carefully curated cellar.
