Chef Félix Robert and his wife Nidta have created a poetic dining destination inside a rehabilitated early-20th-century textile factory in Croix. The cuisine is dominated by seafood and vegetables with nods to Japan and Thailand — tempura, bao, Vietnamese coriander and Thai curry appear throughout the set menus. Shōji-inspired ceilings and bespoke furniture evoke the plant world that inspires every plate.
