Venissa sits on the tiny island of Mazzorbo — connected to Burano by a wooden bridge — in the heart of the Venetian lagoon. The estate includes a working vineyard of the rare native Dorona grape (once thought extinct), a lagoon garden, and a kitchen that sources 90% of its ingredients from the surrounding ecosystem. Chefs Chiara Pavan and Francesco Brutto practice cucina ambientale: cuisine that takes the lagoon as both subject and constraint.
