Umami is Strasbourg's most intimate Michelin-starred restaurant: 16 seats, one chef (René Fieger), one front-of-house (Jessica Fieger). The name references the fifth taste — savory depth — which Fieger pursues through Japanese-French crossover cooking shaped by two years working in Shanghai. No à la carte; two tasting menus (omnivore €95, vegetarian €78). Signature preparations include spice-crusted red tuna tataki, Charolais beef with miso and roasted garlic, and steamed chocolate cake with truffle ice cream. The soy sauce is permanent in the kitchen, making allergen accommodation limited.

- Vegetarian Menu — 5 Courses (78) — The fully vegetarian 5-course tasting menu — pre-order required. Smoked tofu and rice-vinegar radishes open; spiced carrot pancake follows. A complete expression of the Umami philosophy without meat or fish.
- Umami Menu — 5 Courses (95) — The signature 5-course tasting menu — meat and fish — designed by René Fieger working solo. Changes seasonally, always anchored in Japanese-French crossover philosophy.
Wines
- Sake Selection — Japanese Rice Wine, by the Glass (15) — Umami maintains one of France's most serious sake programmes: a selection of 8-10 sake from Japanese producers (Junmai Daiginjo from Niigata, aged Koshu from Yamagata, sparkling Nigori) available by the glass as a pairing alternative to Alsatian wine. Fieger believes sake — like Alsatian Riesling — has a texture and acidity that pairs exceptionally with the region's fish and aromatic dishes. The sake list changes quarterly as new importations arrive.
