Spinechile is a converted old barn 600 metres above Schio, on the edge of the Piccole Dolomiti, with panoramic views across the Vicenza plain to the Berici Hills. Chef Corrado Fasolato — formerly two Michelin stars in Venice — has created a mountain restaurant of rare ambition, with 1,400 wine labels and a cooking style that draws on alpine ingredients (mushrooms, game, mountain dairy, wild herbs) while never abandoning Italian classical technique.
