- Arroz con Pato — Chiclayo-Style Duck Rice, Loche, Ají Amarillo (72) — Peru's great northern dish: duck braised with chicha (fermented corn beer), ají amarillo, and loche squash — the sacred northern Peruvian squash — cooked together with rice until every grain absorbs the richness of the duck. Pesaque's version uses duck confit rather than the traditional stew preparation, applying French technique to the great Chiclayo regional recipe.
- Lucuma Parfait — Andean Lucuma Ice Cream, Algarrobo Caramel (42) — Lucuma (Pouteria lucuma) — the subtropical Peruvian fruit with a distinctive dry, maple-sweet flavour unlike any European fruit — as a parfait (semi-frozen mousse) with algarrobo caramel. Algarrobo (Prosopis pallida) — the Peruvian carob tree — produces a sweet pod processed into a syrup or flour with a butterscotch-vanilla character. Both lucuma and algarrobo are central to Peru's confectionery tradition; together they create one of the most Peruvian-tasting desserts on any Lima menu.
