Chef Trevor Moran's intimate 36-seat restaurant in Nashville's 12 South neighborhood is open only Friday through Sunday and earns its place at #20 on North America's 50 Best Restaurants 2025 with a focused, rotating menu of handmade dumplings, fresh noodles, and kakigori (Japanese shaved ice). Moran, who worked at Noma Copenhagen for four years and at The Catbird Seat before opening Locust, channels an obsessive attention to detail into a small number of dishes crafted with remarkable depth. Reservations open the first of each month for the following month and sell out immediately.

- Steamed Pork Dumplings (20) — Twelve dumplings per basket: house-made rice flour wrappers, impossibly thin yet sturdy, filled with Bear Creek Farm pork, onion, garlic, and ginger. Served in a bamboo steamer with house chili oil. Chef Moran makes approximately 2,000 of these per week.
