- Rhubarb and Tarragon — Naturally candied rhubarb, tarragon confit and tarragon sorbet, with rhubarb extract. (First sweet note)
- Crab and French Caviar — Legs and claws of crab refreshed with Calamansi vinegar from Mr. Montegottero, fennel purée from the Domangeville Farm and whipped yuzu cream, fennel foam, as well as a taster of our French caviar.
