Auberge Saint-Laurent in Sierentz brings the pedigree of Auberge de l'Ill and Alain Ducasse to the Sundgau countryside south of Colmar. Chef Laurent Arbeit has held his Michelin star since 2009, building on his father's legacy in a 4-star boutique hotel with outdoor pool. His Sundgau pink trout barely smoked with brunoise minestrone and almond milk pearled with trout roe, and his knepflés risotto (Alsatian pasta with Parmesan, mushrooms, and black truffle) are uniquely local preparations executed with three-star training.
