  • Biodynamic Wine Pairing — Alsace Natural Growers — Alchémille's wine pairing: exclusively from biodynamic and organic Alsatian producers — Kreydenweiss (Andlau; biodynamic pioneer), Jean-Marc Dreyer (Dambach-la-Ville; skin-contact natural), and Binner (Ammerschwihr; biodynamic). The programme excludes all wines with sulfite additions above 30mg/L and prioritises producers who farm according to biodynamic principles aligned with Jaegle's kitchen garden philosophy. Changes completely with each season's menu.
  • Tisane du Jardin — Garden Herb Tea, Closing Infusion — Alchémille closes every meal with a tisane (herbal infusion) assembled from what is growing in the garden that day — in spring, linden blossom and wild mint; in summer, lemon verbena and basil flower; in autumn, rosehip and sage; in winter, dried meadow herb mix. The tisane is not a standard after-dinner tea; it is Jaegle's final gesture of the garden's presence in the meal. Served loose-leaf in a handmade ceramic pot, steeped 3 minutes.
  • Natural Wine — Kaysersberg Valley Producers — Alchémille's wine list focuses on natural and biodynamic Alsatian producers from the Kaysersberg valley — one of the region's most prestigious wine communes, home to Schlossberg Grand Cru. The wine selection mirrors the kitchen's commitment to natural, low-intervention farming.

  • Forgotten Vegetable Varieties — Permaculture Garden — Heritage and forgotten vegetable varieties grown in Jaegle's permaculture garden — purple carrots, ancient beets, heritage squash, rare lettuces. The garden is planted and maintained by the kitchen team, who pick produce at peak maturity for the day's service.
  • Rhine Fish — Last Rhine Fisherman's Catch — Fresh-caught Rhine river fish from Alchémille's partner: the last traditional Rhine fisherman still operating under historic licence. Wild Rhine perch, pike-perch, or bream — rare, seasonal, and irreplaceable. Jaegle's collaboration preserves one of Alsace's most endangered traditional livelihoods.

  • Jardin en Hiver — Root Vegetable Garden in Winter — Alchémille's winter vegetable composition: a selection of root vegetables from Jaegle's kitchen garden (parsnip, salsify, celeriac, black radish) prepared simultaneously in different ways — raw shaved, slow-roasted in their own juices, purée, and braised — arranged on a plate that maps the winter garden. Jaegle started Alchémille with a commitment to an almost entirely plant-forward menu before plant-based fine dining was widely practiced in Alsace; this course is the centrepiece of that philosophy.
