Astrid y Gastón is the restaurant that changed the history of Peruvian cooking. Founded by Gastón Acurio — recipient of the World's 50 Best Lifetime Achievement Award 2018 — and pastry chef Astrid Gutsche in 1994, it was the restaurant that first proposed Peruvian cuisine as world gastronomy. Located in a magnificent colonial casa in San Isidro since 2014, the restaurant's tasting menu 'Lima of All Bloods' (a reference to the novel by José María Arguedas) maps Peru's multicultural culinary heritage: indigenous, Spanish colonial, African, Japanese, Chinese, Italian, and contemporary.

- Pisco Sour — Acurio's Signature Version, Angostura Traditions (38) — Gastón Acurio's pisco sour: Quebranta grape pisco (the most important Peruvian variety, earthy and robust), fresh lime juice, egg white, simple syrup, and Angostura bitters — made to exactly the ratio that Acurio has served since the restaurant's founding. The pisco sour is simultaneously Peru's national pride and its greatest culinary ambassador; Acurio's version is understood as a reference point for the cocktail.

- Wine Cellar — Peruvian and South American Selection (45) — Astrid y Gastón maintains one of Lima's finest wine cellars, focused on South American producers (Peruvian Tacama and Tabernero, Argentine Achaval-Ferrer, Chilean Almaviva, Uruguayan Garzon) alongside a curated European selection. The sommelier programme was one of the first serious wine service programmes in Peru, developed by Acurio as part of his project to elevate Peruvian dining to international standards.
